Japanese winter strawberries, coveted for their intensity and range of distinctive flavours, are the star ingredients of The Café by Aman’s Strawberry Forêt Dessert selection, offered for a limited time from 26 December 2024. The Café is set in a pocket of leafy woodland near the hotel, where guests and visitors can enjoy an abundance of the naturally sweet and tart Japanese strawberries in every dessert on this special seasonal menu.
The pastry chef’s interpretation of the Saint Honoré, a traditional French cake, combines selected seasonal strawberries and yuzu from Tokushima, Kito, to create a fresh harmony of colours and flavours. A fruit trifle in which the sweetness of the strawberries is enhanced by raw-milk yogurt from the Konsen district of Hokkaido is another delectable highlight. The Strawberry Forêt Dessert collection also includes Amaou mousse and white strawberry macaroons, and strawberry and hibiscus-tea jelly – beautifully crafted treats to savour in a special setting.
