To celebrate cherry blossom season, The Café by Aman is offering a Sakura Forêt Dessert, specially created to reflect the beauty of spring.
Available exclusively from 15 March to 14 April 2025, this delectable new dish is a reworking of the traditional French Charlotte cake. A sponge base is filled with cherry-flavoured jam and strawberry mousse, then topped with cherry blossom-tinted Chantilly cream and strawberries – and finished with a pink spun-sugar candy accent. Further delights on this innovative seasonal menu include a cherry blossom Forêt-Noire Gâteau, a Mont Blanc pastry topped with cherry blossom leaves and cream cheese and biscuits made with fresh mugwort, a slightly tart spring herb.
Another tribute to Japan’s sakura season comes in the form of a cherry blossom custard cream garnished with cherry blossom leaves. Completing the menu is the refreshing option of The Café by Aman’s matcha ice cream, which is made with green Sonogi-cha tea from Nagasaki Prefecture, a regional tea renowned for its mild flavour and low astringency. Combining delicate flavours and pretty sakura-inspired colours, this menu is a beautiful ode tospring.
