A traditional German pastry, Stollen epitomises Christmas for many. This season Aman Kyoto’s pastry team, led by executive pastry chef Hiroyuki Matsuo, will bake Tamba chestnut stollen for guests from near and far to delight in using chestnuts and Yuzu that grows locally in Kyoto. Raisins, dried apple and lemon, and yuzu are kneaded into the dough, with the aromatic zest and unusual flavour of chestnuts enhancing each bite.
